Saltbush is a long-lasting native Australian plant that flourishes all year round and flowers from December to April. The small spear-shaped succulent leaves are a soft grey-blue colour and, when dried, the leaves are perhaps one of our most sustainable herbs.
The Aboriginal people recognise saltbushes as a symbol of strength, connection to the land, and resilience. Although able to withstand dry and harsh conditions, you don’t have to go all the way to the outback to find it in abundance. You’ll find this herb sprouting in many gardens in Merriwa and it’s even grown locally for commercial reasons.
